Decadent Christmas Brunch~Orange/Cranberry Bread

We decided to have a Christmas Brunch this year.  It has been a lot of fun to put together.  I love the tangy tartness of cranberries paired with the sweetness of an orange.  This recipe makes a great combination.  The quick bread is so moist it just about melts in your mouth!






A rich glaze icing is just the right sweetness for the tart cranberries.  It makes a beautiful presentation on the side table.





Each slice is a rich moist goodness. 















Decadent Orange/Cranberry Bread
From Quaker Hill Farm

Preparation time: 30 minutes
Cook time: 45-55 minutes
Makes 10-12 servings

Ingredients

  • 2 Cups Flour
  • 2 Teaspoons Baking Powder
  • ¼ Teaspoon Salt
  • 1 Cup Plain Yogurt
  • 1 Cup Sugar
  • 3 Eggs
  • Zest of One Orange
  • 1 Teaspoon Vanilla
  • Juice of one Orange
  • ½ Cup oil (I used Canola)
  • 1 Cup of Fresh Cranberries and ¼ cup for the top of batter
Icing:
  • 1 Cup of Powdered Sugar
  • 2-3 Tablespoons Cream, Orange Juice, or Milk  ( I used 1 Tablespoon orange Juice and 2 of milk)



Directions

Preheat oven to 325 degrees.  Bake 45-60 minutes or until toothpick inserted in center comes out clean
  1. Sift dry ingredients together
  2. Mix Yogurt, eggs, zest of orange, juice, vanilla,  and oil together
  3. Add above to the dry ingredients
  4. Fold in 1 cup of the cranberries
  5. Prepare a loaf pan with parchment paper on the bottom and the sides.  This helps to prevent bread from sticking to the pan.
  6. Place batter in the pan filling to ⅔ full.  Scatter ¼ cup of fresh cranberries on top of the batter.
  7. Bake as above
  8. Let cool.  Can be removed from pan by lifting parchment paper out of pan.  Place on a breadboard to cool completely.  
  9. For the icing mix the powdered sugar with the desired liquid.  Mix until the consistency is of a creamy consistency or if a simple glaze is desired make it thinner.  Spread over bread.  Garnish with orange slices and fresh cranberries.
