I had a request from our son for strawberry pie. We have a Farmer's Market very close to our home and they have delicious strawberries. It is just wonderful to be able to find these luscious berries this time of the year. I had a pie crust, which was frozen from a previous pie baking adventure and this worked out perfectly as a one crust pie for this strawberry delight. A frozen purchased crust would also work very well.
It makes such a pretty presentation and is extremely simple to put together.
Real whipped cream was the final touch.
Bake the pie crust and let it cool completely. While the pie crust is cooling, slice the strawberries. I used 3 pints to fill a 9-inch pie plate.
In a saucepan, cook over medium heat, 1 cup of water, 1 cup of sugar, and 1/2 cup cornstarch. Heat this mixture until it becomes clear and thickens. Remove from heat and add 1 small box of strawberry jello.
Stir into Strawberries until coated. Let cool. Pile the strawberries into the crust and place in the refrigerator. I used a heavy whipping cream.
Make sure all of the utensils used to make the whipped cream have been chilled. Pour an 8-ounce container of whipping cream into a chilled bowl. Add two tablespoons of sugar and 1 teaspoon vanilla. Beat with a mixer until stiff peaks form.
